Low Carb Endive Quiche

Low Carb Endive Quiche
A good recipe for the Induction phase if your following the Atkins plan.
Ingredients
6 eggs
2 cups chopped endive
3 oz cream cheese
1/3 cup low-fat mozzarella cheese, shredded
Directions:
Wash your greens; Whisk the eggs in a large bowl until fluffy, stir in soft cream cheese. I softened mine in the microwave for 30 seconds. Whisk briskly to incorporate. Your going to see little pieces of cream cheese but that’s ok it’s all going to melt together when it bakes.
Stir in your chopped endive and mozzarella cheese; pour mixture into a deep pie plate that has been sprayed with non-stick spray.This spray is great because it adds zero carbs to the dish. If you don’t have any on hand then you can use butter to coat the dish because it also adds zero carbs.
Bake at 350 degrees for 20 minutes or till a toothpick comes out clean.
Let it cool a bit and slice in six wedges and serve, sprinkle with a bit more mozzarella cheese for a garnish.Enjoy only 3 carbs from each wedge.
 
This recipe can be included in your 1-5 carb category.

mozzarella cheese = <1 carb
eggs = 1 carb each
endive  = 3 carbs for the entire head
cream cheese = 3 carbs (philadelphia original)

Always check the labels for the carb counts.
