On a Low Carb Diet you are supposed to be getting green vegetables each day for their important nutrients. Don't just eat lunch meat, you need your greens. This quick little snack that should satisfy the munchies.
This yummy spreadable goat cheese is very good and less than 1 carb. Celery one large stalk cut into pieces is 2 carbs, or one small stalk is just 1/2 a carb.

Spring Mix Chicken Salad
Super simple recipe to make for a quick lunch or simple supper.
I use Organic Spring Mix from Earthbound Farm. About 2 cups. 1 ounce of sharp cheddar cheese. These chicken tenderlions were left overs from another meal. You can buy Tyson salad chicken in small packs aleady seasoned and cooked. Just heat it up in the micorwave for one minute.
lettuce = 3 carbs
cheddar cheese < less than 1 carb
chicken = 0 carbs
It's always a good idea to eat your daily carbs with a protien, like the chicken in this case or with a hard boiled egg or bacon bits.

Low Carb Endive Quiche
Low Carb Endive Quiche
A good recipe for the Induction phase if your following the Atkins plan.
Ingredients
6 eggs
2 cups chopped endive
3 oz cream cheese
1/3 cup low-fat mozzarella cheese, shredded
Directions:
Wash your greens; Whisk the eggs in a large bowl until fluffy, stir in soft cream cheese. I softened mine in the microwave for 30 seconds. Whisk briskly to incorporate. Your going to see little pieces of cream cheese but that’s ok it’s all going to melt together when it bakes.
Stir in your chopped endive and mozzarella cheese; pour mixture into a deep pie plate that has been sprayed with non-stick spray.This spray is great because it adds zero carbs to the dish. If you don’t have any on hand then you can use butter to coat the dish because it also adds zero carbs.
Bake at 350 degrees for 20 minutes or till a toothpick comes out clean.
Let it cool a bit and slice in six wedges and serve, sprinkle with a bit more mozzarella cheese for a garnish.Enjoy only 3 carbs from each wedge.
This recipe can be included in your 1-5 carb category.

Welcome to the Low Cab Eating Blog.
Do you wonder everyday why you wake up feeling you have been hit by a truck? Do your hands and feet swell up, all puffy and you can't hardly get your ring off or on?
I'm 52 years old and for many years I've been confused about why I just keep getting fatter and fatter. I count my calories, and try to eat healthy. I was making sure I was eating lots of leafy greens and healthy choices like No soda pop, no smoking, and only occasional glass of wine.
I rode my horse for exercise but didn't do to much else, maybe a walk with my husband now and then.
Telling myself this is normal, your getting old, but really I was just getting fat and lazy.
My arthritis was acting up terrible most days, and I'm not the kind to just pop pills and call it good.
In May of this year I had hit my highest weight ever, even when I was nine months along with my children. I panicked thinking this is just going to keep going and limit me so terribly when I get even older.
I went to see my family practitioner, she did a bunch of blood tests on me and checked all my hormone levels to see if we could pinpoint the source of my current agony. After all the tests came back, nothing stuck out to us, I was post menopausal no big surprise. And she ask me what one thing was my biggest complaint. My reply; my weight. I thought if I could just lose some pounds my arthritis would ease up, the bloat in my stomach could be relieved. And generally just feel better. She sent me to the man who would actually change my whole way of thinking about my idea of eating healthy and exercise. Dr Dale Gray, an internal medicine doctor with 29 years of practice. I'm going to share his advice and my progress and recipes with the rest of you who suffer from lack of knowledge like I did.
Really that's all it was; I thought I was on track but lacked the true knowledge of how the body works.
